Lunch Idea - Curry Garbanzo Salad

1 can Garbanzo beans
1/4 cup onion (or green onion), minced
1 clove garlic, minced
1 stalk celery, diced small
1/2 red pepper, diced
1/4 cup chopped olives
1/2 - 1 tsp curry powder
1/4 - 1/2 tsp cumin
1/4 tsp turmeric
1 TB tarragon vinegar
1/2 TB lemon juice
1 tsp. olive oil
sea salt and pepper to taste

Toss all ingredients together in a large bowl and serve chilled. This salad gets better after an hour or two and is even better the next day.

Cumin is an ancient Mediterranean flavor that is used in many different dishes from Indian food, to Greek food, to Mexican food and many others. Cumin is a fun herb to put into cooking. It has a distinct flavor, therefore you do not need to use a lot in your dishes. Cumin is a stimulant, digestive tonic, and carminative, which means it helps to relieve gas, or flatus.
