Dinner Idea - Vegetable Bean Chili

1 medium zucchini, sliced ¼ inch thick
1 medium green pepper, chopped
1 cup chopped onion
1 cup diced carrots
½ cup finely chopped celery
2 garlic cloves, minced
¼ cup olive oil
1 can (28 oz) diced tomatoes, undrained
1 cup picante sauce
1 tsp. vegetable broth powder
1 ½ tsp. ground cumin
1 can (15 oz) garbanzo beans, rinsed and drained
1 can (15 ½ oz) chili beans, undrained

Simmer everything in a crockpot.
